1. Use plenty of salted water

  • Fresh pasta cooks fast - so give it room to move!
  • Use at least 4 quarts of water per pound of pasta and a generous pinch of salt.


2. Cook it briefly

  • Fresh pasta usually takes 4-6 minutes max depending on the thickness and shape.
  • It's ready when it floats to the top and still has a little bite - don't overdo it!

3. Save a little pasta water

  • Before draining, save about half a cup of the cooking water.
  • This starchy water will stretch out your sauce and help it cling beautifully to your pasta.


4. Finish your pasta in the sauce

  • Drain it gently, then toss the pasta directly into your warm sauce for 30-60 seconds.
  • This helps everything blend and coat evenly!
